You would have never guessed that Bill Gates was backing this new carbon-based butter, would you?
This stuff is being produced by a company named Savor in the Chicago suburbs. The butter uses no animals, no plants, and no oils.
I simply cannot fathom the idea, so I'll quote Bill Gates' blog:
They ultimately developed a process that involves taking carbon dioxide from the air and hydrogen from water, heating them up, and oxidizing them to trigger the separation of fatty acids and then the formulation of fat. The result is real fat molecules like the ones we get from milk, cheese, beef, and vegetable oils.
They want this on shelves by 2027.
Essentially, this is "green" butter. No greenhouse gasses, no farmland, no animals -- just made in an industrial park in Chicago (though Savor is based in San Jose, California).
Oh, don't forget the organic slop water!
